Chicken thigh or breast fillets, cut into small pieces
Oil, for frying
1 Egg beaten
Sauce – mayo mixed with seasoning – like Macca’s Captain James Chook Rub
Coat the chicken pieces in flour, egg then cornflakes and put into hot oil deep enough to cover chicken. Mix the sauce together, wait patiently for the chicken to cook – it won’t take long. When it’s cooked, drain it on some paper towel. Wait a little for it to cool enough so you can pick it up, dip into the sauce and enjoy happy hour.
