As popsicles or frozen in a bowl, this cheat’s berry ice-cream is perfect for those summer afternoons at camp.

SERVES: 6 | TIME: 10 Mins

Ingredients

  • 200g strawberries, fresh or frozen
  • 200g raspberries, fresh or frozen
  • 2 x tablespoons of caster sugar
  • 1-litre of good quality vanilla ice-cream
  • Note: Use any berries you like

Method

Place berries and caster sugar in a saucepan over a low heat, bring to a gentle simmer. Allow to cook very gently for five minutes. Remove from heat, cool to room temperature.Pull ice-cream out of the freezer and allow it to stand at room temperature until soft, but not melted. Place ice-cream and berry mixture into a bowl and stir gently, creating swirls but not completely mixing through.Smooth mixture into a container and return to freezer to set. Alternatively, pour mixture into popsicle moulds for fun, single-serve ice-creams perfect for summer.
