INGREDIENTS

STUFFING 3 x cups bread crumbs 1 x Onion, finely chopped Salt & Pepper

GARLIC BUTTER 150g Butter 5 x Cloves of finely diced garlic 1 x Handful of finely chopped parsley Salt & Pepper 2 x Small chickens or 1 x medium chicken Salt & Pepper

METHOD

– Combine 150g butter, garlic, parsley and salt and pepper together and set a aside

– Combine stuffing ingredients together in a bowl and bring together. This can be done ahead of time at home and taken to camp in a clip-lock bag.

– Add stuffing to the chicken cavity, taking care to fill it completely.

– Using your finger, separate the chicken skin from the breast, and stuff with garlic butter.

– Season your chicken generously with salt and pepper and put your chicken on the rotisserie skewer, taking care to fix it firmly so that it doesn’t spin on the skewer

– Cook over a low heat for roughly an hour or until chickens are crispy and golden on the outside and serve!
