Ingredients:

1 chilli chopped into rounds 1 knob butter 1 drizzle oil 2 tomatoes de-seeded and diced 2 shallots diced 2 cloves garlic chopped ½ bottle cider 1 dozen mussels 1 dash cream 1 lime juiced 1 bunch coriander 1 bunch parsley

Method:

Step 1 Into the Ozpig Dutch oven combine the chilli, butter, oil, tomatoes, shallots, and garlic. Cook for around 3 minutes before adding the cider and mussels.

Step 2 Place the lid on the Ozpig dutch oven and allow to steam for around 5 minutes. After 5 minutes remove the lid and add the cream and lime juice.

Garnish with fresh coriander and parsley just before serving.
