King Prawn Tacos

Renee Napthali from the Modern Foodie sourced some local king prawns and cooked King Prawn Tacos in Elliston SA. The day was not full of sunshine, but a bit overcast and a lot windy! Did this stop Renee or the GoSun – no. With or without full sunshine the GoSun will cook anything that our Modern Foodie wants.

King Prawn Tacos

Ingredients

12 Peeled King Prawns
1 Tbsp Fajita Seasoning
4 Soft Tacos
1/2 Mango Diced
1/4 Cup Radish Slice
1/4 cup finely sliced Red Cabbage
1/2 cup fresh chopped Coriander
1 fresh lime
2 TBS Olive Oil and 2 TBS Chipotle Aioli (or one of your choice)

Method

Peel the prawns and drizzle some olive oil over them
Sprinkle the Fajita seasoning over the prawns, stir to make sure all the prawns are covered with the seasoning
Lay the prawns flat along the GoSun tray and let them cook for about 20 minutes

To make the Salsa dressing

Cut up the mango into small cubes
Thinly slice the radish and mix in with the mango
Toss with the finely sliced red cabbage and fresh chopped coriander
Squeeze the lime over the salsa mix
Add the aioli and give it all a stir

Spread the Salsa along the middle of the Tacos and add three cooked prawns to each taco. Sprinkle some extra Coriander on top and finish off with a squeeze of lime juice.
